One Pot or Oven Baked
For those days when you just can't face the washing up
I love one pot cooking, in fact, I have the perfect piece of kitchen equipment - an Instant Pot. If you've never heard of them they're a pressure cooker, slow cooker, rice cooker, yoghurt maker all combined into one. I use mine every day, sometimes twice or three times.
Because of this, I've included 'ordinary' instructions and instructions for Instant Pot users in my recipes. I've also added a link at the bottom of the page in case you're interested in getting one for yourself. Zucca Speltotto

Zucca is Italian for squash or pumpkin and I eat LOADS of it. This recipe is kind of a risotto using Spelt , a really tasty, nutty grain, adapted from a River Cottage recipe.

In the pan or oven baked I love Ratatouille. Mix it up a bit with a Turkish twist or use it to top some toasted ciabatta and goats cheese for a kind of pizza

Daube De Boeuf

Really, really tasty. This slow cooked beef is something you can just throw in the slow cooker and leave. Veggies are cooked at the same time. Perfect!
