One Pot or Oven Baked
For those days when you just can't face the washing up
I love one pot cooking, in fact, I have the perfect piece of kitchen equipment - an Instant Pot. If you've never heard of them they're a pressure cooker, slow cooker, rice cooker, yoghurt maker all combined into one. I use mine every day, sometimes twice or three times.
Because of this, I've included 'ordinary' instructions and instructions for Instant Pot users in my recipes. I've also added a link at the bottom of the page in case you're interested in getting one for yourself. Zucca is Italian for squash or pumpkin and I eat LOADS of it. This recipe is kind of a risotto using Spelt , a really tasty, nutty grain, adapted from a River Cottage recipe.
